  • 1-1/2 c. plain fat free yogurt
  • 1 tsp. grated lemon zest
  • 1 tbsp. chopped fresh mint leaves
  • 1 tsp. granulated sugar
  • 1/2 tsp. ground cumin
  • 1/4 tsp. cayenne pepper
  • 1 c. English cucumber, peeled, seeded and diced 1/4-inch
  • 1 c. California raisins
  • Kosher salt and freshly ground pepper



1 Set a strainer lined with a paper coffee filter over a bowl.

2 Place the yogurt in the filter and let it drain for 3 to 4 hours.

3 Turn the thickened yogurt into a mixing bowl.

4 Fold in the remaining ingredients and season with salt and pepper.
