Curried Polenta

Polenta is a quick and easy side to change things up from rice and potatoes.  Usually it is simply cooked in water or milk with lots of salt, but this version is extra creamy and flavorful because of the coconut milk and curry powder, you won't believe how everyone will love this unique twist on polenta.

  • 4 cups water
  • 1 (14-ounce can) coconut milk
  • 1 teaspoon kosher salt
  • 1 tablespoon curry powder
  • 1 1/2 cups cornmeal


1. Bring water and coconut milk to a boil.

2. Add salt and curry powder.

3. Whisk in cornmeal, lower heat, and simmer, whisking often until thick and tasty, about 5 minutes.
