Ingredients

  • 2 cup whole wheat flour
  • 1/2 cup light brown sugar
  • 1/2 cup oil
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 2-3 tablespoon water
  • 1 can date filling such as Solo brand
  • 1/4 cup chopped walnuts optional

Instructions

  • Mix the first six ingredients until it makes a firm dough, similar to pie crust. Roll out dough into a rectangle. Spread date filling over dough, if using walnuts sprinkle over the date filling. Roll up jelly roll style, wrap in plastic wrap and refrigerate for an hour, more time is fine. Remove plastic wrap, slice, and bake on a parchment paper lined baking sheet for 15-20 minutes at 350 degrees.
  • Tip: Once the dough rolled up and wrapped in plastic wrap it can be double wrapped and frozen for up to three months. There is no need to defrost it completely, just let it thaw until soft enough to slice.
