COOKIE CRISP COOKIES

The idea behind these cookies is simple. Make chocolate chip cookie dough, pour in a cup and a half of this cereal, then proceed as directed. So simple, so delicious.

Servings

Ingredients

  • 2 1/2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup 2 sticks butter or margarine
  • 3/4 cup granulated sugar
  • 3/4 cup dark brown sugar
  • 1 1/2 tsp vanilla extract
  • 2 eggs
  • 1 cup chocolate chips
  • 1 1/2 cups Cookie Crisp Cereal

Instructions

  • Preheat oven to 375. Line or grease cookie sheets and set aside.
  • In a small bowl, sift together flour, baking powder and salt. Set aside.
  • In the bowl of an electric mixer, cream butter and sugars until creamy. Add vanilla extract and eggs and beat until fully incorporated. Add flour mixture, and beat until just combined. Using a spoon, gently stir in the chocolate chips and cereal. Drop dough by heaping tablespoons and bake at 375 for 9-10 minutes. Cool on tray for one minute before removing to wire rack to cool completely.
  • Important note: don’t make these cookies too small, as the cereal is too large to work in small cookies, and the taste and texture will suffer.
  • Enjoy!

About Miriam Pascal

Hi, my name is Miriam. I’m a 20-something Jewish gal from New York. I started to cook and bake as an outlet, and over the last couple of years, it’s morphed into so much more than that….Some of you may recognize me from my baking column in Ami’s Whisk magazine. Columnist. It’s just another one of the hats I wear, and another reason that I don’t sleep very much. Freelance food photographer? Well that’s not exactly a title I would have associated with myself before I got started on my little blog, but now it’s a title I proudly carry – and you guessed it – another reason I don’t sleep enough!Let’s get something straight before we continue. I am not a foodie.Nope. My palate is not what you would call adventurous. I won’t touch an olive under any circumstances. I won’t eat fish – even at gunpoint. I have a strong dislike of yogurt. And of feta cheese. And honestly, a whole bunch of other stuff. You get the point.Y’know what I do like? Simple recipes that I can make in my limited time. Recipes with approachable ingredients that are still exciting and delicious. Turns out, so many of you like those recipes too. Who’da thunk? So whether you’ve got limited to no time in the kitchen (like me) or you love delicious food (me too!) join me and we’ll eat well together!

I have seen a similar cereal at Shufersal in the past but if you can’t find the cereal I’d probably use a different recipe.

I love cookie crisp too, not as a cereal, but a lower calorie cookie like dessert. This recipe looks good for those high calorie occasions.

Okay, I am obsessed with this recipe! Cookie Crisp is the best cereal EVER and I can’t wait to try this recipe next time I make cookies.
