This unique Middle Eastern combination of Laffa, Labne and cucumbers makes the ultimate upgraded cucumber sandwich. Perfect to pack for a picnic or for lunch, this sandwich will satisfy all your senses.

- Four Druze Laffa (large flat pitta bread, if not available mountain bread or Indian Naan works equally well)
- 1 container Labneh Yoghurt cheese
- 8 sliced preserved lemons, click here to make your own
- 2-3 cucumbers julienned
- 1/4 cup good quality extra virgin olive oil mixed with 1 tablespoon zaatar
On a large clean work surface lay out the Laffa one at at time. Fold in half and layer with the cheese, cucumber and two slices of lemon. Drizzle with oil and fold/roll the bread to make for easiest handling. Reserve extra oil for dipping.
