Endive Citrus Salad with a Mojito Dressing

The bitterness of the endive, the sweetness of the citruses, and the tang of the lime and mint, bursts onto the palate, giving the dish a refreshing delicious flavor. Mojito, a well known cocktail which utilizes rum, mint and lime, is the inspiration for the dressing in this striking salad.

  • 4 heads of Belgian endive, leaves sliced off the stem, washed and dried
  • 2 large oranges, segmented
  • 1 large pink grapefruit, segmented
  • Zest of a lime
  • ¼ cup chopped mint


  • Juice of two limes
  • ¼ cup olive oil
  • 1 tablespoon rum
  • 2 teaspoons honey
  • 1 teaspoon warm water
  • 1 teaspoon black pepper


Mix dressing ingredients.

TIP: Use this salad as a hors d'oeuvres or appetizer at an event or family gathering.
