Flax-Breaded Flounder

Ingredients
- 1/8 cup flaxseed meal
- ¼ teaspoon Onion powder
- ¼ teaspoon garlic powder
- Black pepper
- paprika for color
- 1 portion flounder
- juice of ½ fresh lemon
- 1 tablespoon extra virgin olive oil
Preparation
In a bowl, mix together all dry ingredients. Place flounder in a pan sprayed with Pam spray. Squeeze lemon over fish; then drizzle olive oil on top. Cover the entire portion with the flaxseed mixture. Bake at 400 degrees for 10-15 minutes until the fish flakes easily with a fork. Serve with a piece of lemon on the side. (Sometimes I will prepare this recipe earlier in the day and let it marinate in the refrigerator until I’m ready to bake it. When done this way, it tastes even better!)
