Freekeh is an ancient grain with a ton of nutritional benefits. It is wheat that is harvested while young and green and the result is a chewy, nutty grain that I am really starting to love.
Make sure to use a great quality extra virgin olive oil. We love Colavita!

Freekeh Pilaf
Servings
Ingredients
- 1 cup freekeh
- 2 cups water or chicken stock
- 2 tablespoons extra virgin olive oil such as Colavita
- 1 tablespoon fresh lemon juice
- Kosher salt
- Freshly ground black pepper
- ¼ cup chopped flat leaf parsley
- ½ teaspoon fresh thyme leaves
- ¼ cup raisins
- 2 teaspoons honey
Instructions
- Simmer freekeh and water until the level of the water is even with the level of freekeh, about 20 minutes. Turn off the heat, cover the pan, and allow steam to finish the cooking process.
- Season the freekeh with evoo, lemon juice, salt, and pepper.
- Add the herbs, raisins, and honey and adjust seasoning as needed.

Have you tried adding the raisins as soon as you turn off the heat—or even at the beginning? I love eating dried fruit when it’s plump, and having somewhat-larger pieces of fruit might even obviate the need for honey.
Haven’t tried it but sounds like a good idea.
Freekeh is a type of wheat so it is not kosher for Passover and therefore it also does have gluten, but many of these ancient grains have much less gluten and many even celiacs have found they can tolerate freekeh, so if you haven’t had an issue you should be fine.
I just discovered freekeh and it’s yum. Is it kosher for passover? I am not quite clear about that. And if I am not celiac but trying to cut out wheat and go gluten-free where I can, does freekeh wildly throw that off? I so far have experienced zero discomfort.
Maybe you can try the same recipe with Quiona or use that kosher for passover couscous.

No, it is low gluten, but not gluten free.
