  • Marinade: olive oil
  • fresh crushed garlic
  • Salt
  • Pepper
  • fresh thyme
  • Brick Roast
  • Gravy:
  • shallots
  • fresh crushed garlic
  • sliced mushrooms
  • Salt
  • Pepper
  • chicken stock
  • Water
  • dry red wine



1 Combine marinade ingredients and marinate meat for 24 hours.
2 Place brick roast on low flame on the barbeque. Turn every 10 minutes so roast doesn''t burn.
3 Leave on barbeque for an hour. Take off barbeque and let cool. Slice rare.
4 Make gravy by sauteing shallots, fresh crushed garlic, sliced musrhooms, salt and pepper. Add chicken stock, water and red wine. Cook for half hour till reduced to gravy. Strain and remove solids.
5 Place rare sliced roast in a roaster and pour gravy on top. Cook another hour and a half. Saute mushrooms in garlic and serve on top of roast.
