Confit refers to the method of cooking something low and slow for a long time either in oil or sugar water. While chicken and duck confit are popular amongst chefs, garlic confit is popular among everyone because it is easy to prepare and can be used in so many ways.
Whole garlic cloves are slowly simmered in oil until they are soft and golden and just a little bit sweet. You can then store them in a jar and use them all week long on everything from soups, sauces, sandwiches, dressings, mashed potatoes and/or pasta.
Many people make confit on the stove, but I like to make it in the oven. It’s so simple to just throw it in the oven while other foods are cooking and it’s easy to keep the temperature constant.

Garlic Confit

Ingredients
- 2 cups fresh garlic cloves
- Fresh herbs such as thyme, rosemary, or dried chilies (optional)
- Few black peppercorns optional
- Extra Virgin Olive Oil enough to completely cover all garlic cloves
Instructions
- Preheat oven to 325°F.
- In a small oven proof container, place garlic cloves, herbs (if using), and black peppercorns (if using). Pour enough oil to submerge the garlic cloves.
- Roast uncovered for 45 minutes.
- Let cool completely, before serving or storing.
- You can store garlic in a jar in the fridge for 3-4 weeks either with oil or separate from the oil. The oil can also be used on its own for any dish where you want a little extra garlic flavor.
