Grapefruit Salad with Candied Pecans and Avocado

Walnut Shallot Dressing

  • 1 shallot, minced
  • 3 tablespoons reserved grapefruit juice
  • 3 tablespoons champagne vinegar
  • 3 tablespoons sugar
  • 1/3 cup roasted walnut oil
  • Kosher salt and freshly ground black pepper, to taste


  • 4 cups romaine, chopped
  • 4 cups baby spinach leaves
  • 1/2 cup honey-glazed pecans
  • 1 avocado, diced
  • 1 red grapefruite, peeled and segmented (reserve juice)
  • 1 small red onion, thinly sliced


Prep Dressing: In a small bowl, combine first four dressing ingredients. Whisk in oil to combine. Season with salt and pepper
Assemble: In a large bowl, combine all salad ingredients. Toss with Walnut Shallot Dressing and serve.
