Grapefruit Salad with Candied Pecans and Avocado

Ingredients
Walnut Shallot Dressing
- 1 shallot, minced
- 3 tablespoons reserved grapefruit juice
- 3 tablespoons champagne vinegar
- 3 tablespoons sugar
- 1/3 cup roasted walnut oil
- Kosher salt and freshly ground black pepper, to taste
Salad
- 4 cups romaine, chopped
- 4 cups baby spinach leaves
- 1/2 cup honey-glazed pecans
- 1 avocado, diced
- 1 red grapefruite, peeled and segmented (reserve juice)
- 1 small red onion, thinly sliced
Preparation
Prep Dressing: In a small bowl, combine first four dressing ingredients. Whisk in oil to combine. Season with salt and pepper
Assemble: In a large bowl, combine all salad ingredients. Toss with Walnut Shallot Dressing and serve.
