Green Bean and Three Onion Saute

Ingredients
- 3 tablespoon olive oil
- 2 large shallots, peeled and sliced
- 1 large red onion, peeled, halved and sliced
- 1 large Spanish onion, peeled, halved and sliced
- 4 cloves garlic, chopped
- 2 pound green beans, trimmed and cut into 2-inch pieces
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon kosher salt
- Freshly ground black pepper
Preparation
Heat oil in a large sauté pan over medium high heat. Add shallots, onions and garlic and sauté 6 to 10 minutes or until softened and lightly browned, stirring every few minutes. Add green beans and 1/3 cup water and cover. Cook 10 minutes or until beans are crisp and water has evaporated. Stir in red pepper flakes, salt and pepper and transfer to a serving bowl.
