Grilled Plum Salsa

Grilled plums are flavorful and vibrant on their own, add the juice and some jalapeño if you like and you have an amazing fruit salsa good enough for sweet or savory meals. I like to serve with grilled pound cake and some non dairy whipped cream.

Serve with Grilled Pound Cake.

Ingredients

  • 4 slightly firm plums
  • Vegetable oil cooking spray
  • 1 cup orange juice
  • 3/4 cup dark brown sugar
  • 1/8 teaspoon ground cinnamon
  • 1-2 small jalapeno peppers seeds removed, minced
  • 1 tablespoon fresh mint leaves finely minced

Instructions

  • 1 Halve the plums and remove the pits. Spray the cut surfaces of the plums with a light coating of cooking spray. Place them cut-side down on the grill grate. Cook 5-6 minutes, checking periodically to make sure that they aren’t burning, but a little bit of char is desirable. Turn the plums on their rounded side and grill for a few minutes more. remove from the grill and allow to cool. 2 Mix the orange juice, brown sugar, cinnamon, minced pep- per and mint leaves in a large bowl. Dice the cooled plums and add them to the mixture. I prefer a chunkier salsa, but you can dice them as small or as large as you’d like. Stir the salsa to combine, cover with plastic wrap and refrigerate for at least an hour to let the flavors meld.
