Blueberry Muffins

A very healthy muffin, these do have some fat and sugar, but they are not super sweet.  They also have whole grains and blueberries which are loaded with antioxidants, perfect take along snack or make ahead breakfast.

Ingredients

  • ⅓ cup melted butter or coconut oil, olive oil or grapeseed oil
  • ⅓ cup date honey or honey
  • 2 eggs
  • 1 ¼ cups plain low fat yogurt
  • 1¾ cup whole wheat or spelt flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 cup fresh or frozen blueberries

Preparation

1. Preheat oven to 325℉ and spray a 12 cup muffin cup tray with cooking spray.

2. In a large bowl, beat the oil, date honey, eggs, and yogurt together. Add flour, salt, baking soda, and vanilla and mix until just combined. Gently fold in blueberries.

4. Divide batter evenly between muffin cups. Bake for 25 minutes.
