Honey Mustard Chicken Cutlets

Ingredients

  • 2 chicken cutlets
  • 4 teaspoon Dijon mustard
  • 1 teaspoon brown sugar
  • 1 tablespoon honey
  • 1 teaspoon canola oil
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt + 1/8 tsp
  • 1/8 teaspoon pepper
  • 1 tablespoon bread crumbs
  • 1/4 teaspoon thyme
  • 1 medium red onion sliced or quartered

Instructions

  • Preheat oven to 400 degrees.
  • Combine mustard, brown sugar, honey, oil, ginger, 1/4 tsp. salt, and pepper. Spread over chicken to coat.
  • Combine bread crumbs, thyme and remaining salt. Sprinkle over chicken.
  • Arrange onions on the bottom of a pan and place chicken on top.
  • Bake for 30-35 minutes.

    I made these for company in our Sukkah. The dilemma was how to make them ahead of time so not everything had to be done the last minute. Here’s what I did with great success! I cooked the chicken for only 20 minutes, wrapped the dish in foil and put it in the refrigerator overnight. The next day I sliced the breasts and out them in the sauce. I covered the dish tightly with plastic wrap and heated everything in the microwave for 4 minutes ( I had made about 16 breasts). I left the wrap on until I was ready to serve. It was perfect! Not dried out at all and very moist. I plan to use the remainder tonight and will just serve the chicken at room temperature so it doesn’t dry out.

    i have tried this with tremendous success. However i do leave out the onions as my family likes the cutlets more crispy on the bottom. Also i tried using cornflake crumbs & pretzel crumbs with amazing results. in fact the pretzel crumbs give it a great flavor with the combination of the honey & mustard. almost like eating a hot pretzel with mustard.

    The great thing about chicken is that you can basically pour any yummy sauce/dressing over it and it will taste good. One of my favorites is french dressing over dark meat chicken on the bone. I think a pre-made honey mustard dressing will be delicious with this recipe.

    Am I missing something? It’s called Honey Mustard Chicken and there is neither honey nor mustard in the recipe? Are there some ingredients missing?
