Ingredients

  • 1 ½ cup all-purpose flour
  • ¾ cup whole wheat pastry flour
  • 8 cup apple about 6 large apples – cored, peeled and cut into small pieces
  • 1 cup mango about 1/2 large mango – peeled, pitted and diced
  • 2 tablespoon honey
  • 3 tablespoon 1 tablespoon lemon juice
  • ½ + 1/4 teaspoons salt
  • 1 teaspoon cornstarch
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ cup canola oil
  • 1 ¼ cup soy milk
  • 1 tablespoon turbinado sugar

  • Preheat oven to 400° F.
  • Spoon flours into dry measuring cups and level with a knife. Whisk together in a medium size bowl. Set aside 1/4 cup.
