This is how to make perfect, every time, fluffy rice.
I love making rice in the oven, it is my favorite, fool-proof, fail-proof, method that works for any kind of rice and any quantity. With 6 kids in the house, we go through a lot of rice and when I make larger quantities on the stovetop I inevitably end up scrubbing burnt bits off the bottom of my pot. So easy and delicious, I make this rice almost weekly. Just make sure to follow my secret trick, the water must be boiling. Watch how I do it on Instagram, scroll through to the middle.
I like to use a disposable 9x13-inch pan for easy cleanup and because I usually double the recipe, but feel free to use any size and type of oven-to-table casserole dish.
Feel free to add spices along with the salt for any style of flavored rice you like. You can also add lentils and/or chickpeas and beans to the mix, like our Tri-Color Rice with Lentils and Chickpeas.

- 1½ cups rice (any kind)
- ½ tablespoon kosher salt
- 2 tablespoons extra virgin olive oil
- 3 cups boiling water
1. Preheat oven to 400°F.
2. Spread rice in the bottom of the pan. Add salt and oil.
3. Pour in boiling water, cover and bake 25 minutes for white rice or 1 hour for brown.
