Lamb Chops With Rosemary Simple Syrup
These grass fed kosher lamb chops don't need much to be delicious, but the sugar in the simple syrup helps the chops caramelize beautifully.

Ingredients
- 4 Grow and Behold Lamb Chops
- 2 tablespoons rosemary syrup (recipe below)
- 3 tablespoons Dijon mustard
- 2 cloves garlic, smashed or minced
- 1 teaspoon black pepper
Rosemary Simple Syrup
- 1 cup sugar
- 1 cup water
- 2-3 sprigs fresh rosemary
Preparation
1. Combine all ingredients and coat chops.
2. Marinate at least 30 minutes or up to 2 hours (if longer than 30 minutes, put the meat in the fridge; remove from fridge 30 minutes before grilling to bring it back to room temperature).
3. Grill at high heat until medium rare.
Rosemary Simple Syrup
1. Put all ingredients in a small saucepan.
2. Bring to a boil, then simmer over medium heat 10-15 minutes or until syrup reaches your preferred flavor.
3. Store in a sealed jar in the fridge 2-3 months.
4. Also delicious as a base for summer drink with seltzer, cider vinegar and a splash of gin or whiskey!
