Matzo 7 Layer Cake
Servings
Ingredients
- 1 ½ pounds bittersweet chocolate melted
- 1 cup sweet red wine or grape juice
- 7 sheets matzo
- Garnish: fresh berries
Instructions
- Line a baking sheet with parchment paper. Keep chocolate warm by keeping melted chocolate in a bowl set over a bowl of warm water.
- Place wine in a pan large enough to accommodate a sheet of matzo without breaking it.
- Soak one sheet of matzo in wine for about 30 seconds. Transfer to the prepared baking sheet and spread a thin layer of chocolate over the matzo being sure to cover the edges. Moisten another sheet of matzo in wine and stack on top of the matzo with chocolate. Spread chocolate on the 2nd sheet of matzo and repeat until all matzos are moistened and covered in chocolate. Pour remaining chocolate over the top, allowing it to drip down the sides. Spread it with a spatula.
- Refrigerate to allow chocolate to set up.
- Transfer to a serving platter and garnish with fresh berries, if desired.

sorry to hear that. i find that some types of matzo need a little more time to soak and soften and others fall apart easily. I am eating a whole wheat, organic matzo (RIGHT NOW IN FACT!) that would require a lot of soaking to soften.
if you do try it again, I can recommend you gauge the type and texture of your matzo and how fast it soaks up the wine.
we tried the recipe several times and it varied with each different matzo.
I was so excited to find this recipe because I used to make a 7 layer matzo cake that was fantastic but stopped making it because it included raw eggs in the chocolate, making it more like a mousse. I am sad to say that I was extremely disappointed with this recipe. I followed the directions, except that I used semi sweet chocolate bits. It was hard as a rock, the matzo did not absorb the wine and swell up making it more like soft layers. My whole family was disappointed and will not be making again.
Please note that the blessing on this cake is Hamotzi (unless eaten as desert at the end of a meal at the start of which you already said Hamotzi).
