Matzo Fried Chicken

This Matzo Fried Chicken (MFC) is an amazing autumn twist on the standard roast chicken. Add this to your repertoire for when any of the Jewish holidays rolls around to keep things interesting. You will like this better than the original, matzo meal gives in an incredible crunch. 

Serve this with a squeeze of lemon, a drizzle of honey, corn on the cob and a fresh kale avocado salad to keep everyone drooling.

  • 1 whole chicken, divided into parts
  • grapeseed or canola oil, for frying

Breading Mixture

  • 1½ cups matzo meal
  • ½ cup potato starch
  • ½ teaspoon cayenne pepper
  • ½ teaspoon thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon baking powder

Egg Mixture

  • 3 eggs
  • ¼ cup water
  • ½ teaspoon salt


  1. Add the matzo meal, the potato starch and all the spices to a bowl. Mix well.
  2. Bring the oil to medium heat in a deep frying pan.
  3. Add the eggs, water and salt to a separate, larger bowl. Mix well.
  4. Add the chicken parts to the egg mixture and coat thoroughly.
  5. Dip each piece of chicken in the matzo meal mixture then place carefully into the frying pan.
  6. Cook until golden brown, at which point the chicken will probably be cooked through, but it doesn’t hurt to check.
