The chewiness of the Mike and Ike candies add a wonderful textural complexity to these fruity rice krispie treats. They are sure to be a crowd pleaser.

Mike and Ike Rice Krispy Treats

Ingredients
- 3 tablespoons 1.5 oz, 42g margarine
- 10 oz 280 g marshmallows
- 1/2 cup 1.7 oz, 48 g marshmallow fluff
- 6 cups 5.7 oz, 160g crisp rice cereal
- 1 ½ cups 13 oz Mike and Ike Original Candies, coarsely chopped*
Instructions
- *the candy is quite sticky so the best way to chop it is with a lightly oiled knife.
- Grease a 9 X 13 pan and set aside.
- Combine the marshmallows and margarine in a large microwave safe bowl. Place the cereal and candy in another bowl and toss well to combine. Set aside. Microwave the marshmallows and margarine for one minute. Remove from the microwave and stir to combine. If the marshmallows are not fully melted return to the microwave and cook for 30 seconds at a time until they are fully melted. Stir in the fluff and mix well. Add the candy and cereal mixture and stir until combined.
- Turn the mixture out into the prepared pan. Let cool, then cut into squares.











I always use the paskesz brand and it works fine. I also do 30 sec intervals in the microwave. I used two bags for this recipe with 3tbsp margarine and one bag of Mike and ikes. I needed about 8 cups rice crispies. My only complaint about this recipe are mike and ikes do not chop well. I practically needed to cut each one!
I find that the Elyon brand of kosher marshmallows works much better than any other brand. That is what I use and I have never had trouble melting them in the microwave. I start with 30 seconds and then see if it needs more.
Kosher marshmallows work differently than the nonkosher ones. I have never microwaved them because there would be a problem with monitoring how melted they are and would overcook. When I make Rice Krispie treats I do it in a pan on low heat and add in marshmallow cream as this recipe states in the ingredients. Kosher marshmallows don’t melt as molten as the others and you need the heat control and the gooeyness the cream gives you.
I am totally frustrated. I bought Paskesz brand mini marshmellows for this recipe and they wouldn’t melt. I ended up with a hard chunky mess. I had to toss everything. Is there a certain brand of kosher marshmellow that this does/doesn’t work with?

That is true! But I do believe you can find “Kosher” marshmallows made from fish in the Kosher section of the grocery store or at Amazon.
Marshmallows are not kosher. Gelatin is an ingredient. Wiki states: “Gelatin is a mixture of peptides and proteins produced by partial hydrolysis of collagen extracted from the skin, boiled crushed horn, hoof and bones, connective tissues, organs and some intestines of animals such as domesticated cattle, chicken, pigs, and horses.” 🙁
