One Pot Chicken Noodle Casserole

Leftover Chicken Soup Pasta Dinner

Recently there was a request for recipes to use leftover chicken soup. With that in mind this casserole was born, but you can also use chicken broth.

  • 12 ounces whole grain bowtie pasta
  • 3 large carrots, diced
  • 1 cup peas
  • 3 cloves garlic, minced
  • 2 cups diced leftover chicken
  • 4½ cups leftover chicken soup with all the goodies


  1. Layer pasta, carrots, peas, garlic and chicken in a Dutch oven or large pot with lid. Pour chicken soup over top. Cover pot.
  2. Cook for 10-12 minutes, until liquid is mostly evaporated and pasta is al dente. Toss ingredients occasionally throughout cooking.
