Pistachio Pesto Coated Brussels Sprouts
Brussels sprouts taste great simply roasted, but for a little something extra, coat with a nutty pesto. This recipe uses a version of pistachio, breadcrumb and mint pesto for a real unique taste you will love.

Ingredients
- 1 lb. Brussells sprouts
- 1 teaspoon coarse salt
- 1/4 cup pistachios
- 1/4 cup bread crumbs
- 3 tablespoons olive oil
- 2 tablespoons fresh mint
Preparation
1 Preheat oven to 400°F. Clean and trim Brussels sprouts and place in pan with salt. Roast in the oven for 20 minutes.
2 Meanwhile in a food processor mix pistachios, bread crumbs, olive oil and mint. Process until smooth. Pour over the sprouts and bake another 15 minutes.
