Bibi’s Bakery in the Pico neighborhood of Los Angeles offers a taste of authentic Israeli cuisine. You can get a full, satisfying meal for under $10. They prepare unique, authentic Israeli food baked in their stone oven. Their homemade pita is phenomenal, and bourekas, sesame rolls, and hummus are just some authentic eats we enjoyed. 

The sambusak (Israel’s answer to the calzone or empanada) was really fun, you can customize your flavors and fillings and they bake it fresh on the spot just the way we like it.

For this recipe use pizza dough or if you’re making your own, try our sambusak dough recipe.

Ingredients

  • Pizza or sambusak dough
  • 1 cup marinara sauce
  • 1 cup feta cheese
  • 1 cup shredded mozzarella cheese
  • Vegetable filling of choice*
  • 1 egg plus 1 tablespoon water
  • Sesame seeds

Instructions

  • Preheat oven to 425°F. Line a baking sheet with parchment paper. 
  •  Transfer dough to floured surface and divide into 8 pieces. With a rolling pin, roll out each piece into a thin rectangle, then with a glass cup, cut into 4-inch round circles. You should have between 15 and 20 circles. 
  •  Place a spoonful of marinara, cheese and vegetable of choice in the center of the dough circles. Fold over to make a half moon shape. Using a fork, lightly crimp edges to seal. Place on prepared baking sheet or plate.
  • Brush egg wash over top and sprinkle with sesame seeds. With a sharp knife, pierce a small hole/vent for steam to escape, in the tops of each pastry. 
  • Bake in a 425°F oven for 25 minutes until golden brown. Serve with extra marinara sauce for dipping. 
  • *Choice of fillings: Olives, mushroom, onion, corn, potato, jalapenos, pineapple, tomatoes, eggplant, tuna, or whatever you prefer.
