Pull Apart Cake

Ingredients
- 5 – 6 cup flour
- 1/2 cup sugar
- 1 teaspoon salt
- 2 packages active dry yeast
- 1 cup coffee rich
- 1/2 cup water
- 4 tablespoon margarine
- 2 large eggs
- 2 teaspoon lemon peel spice Island sells it dried in the spice aisle
- 1 cup vegetable oil
- 3/4 cup finely chopped walnuts or pecans optional
- 3/4 cup sugar
- 3/4 cup brown sugar
- 2 tablespoon cinnamon
- 1 bag chocolate chips optional
Instructions
- Combine Coffee Rich, Water and Margarine in a container and melt together in microwave until warm but not hot.
- Put 2 C. flour, ½ C Sugar, Salt, Yeast and Lemon Peel in a Mixer Bowl. Add warm liquid and mix until combined. Add Eggs and mix again for 2 minutes. Change to kneading hooks and add 3 C. Flour. Add enough more flour to make a soft but not sticky dough. Knead for several minutes. Turn into a greased bowl and allow to rise for 1 hour.
- Punch down dough. Cut the dough into 32 pieces (½ it and ½ it again and again until you have 32 more or less equal pieces.)
- You MAY add chocolate chips at this time if desired.
- Grease a round tube pan with Pam. Dip each piece of cake into the oil and then into the crumb mixture. Put pieces in tube pan:
- 16 on the bottom. 16 on the top. (and…believe it or not…..11 on the outside and 5 on the inside!)
- Let cake rise in tube pan until it reaches the top of the pan. Bake at 350 for 45 minutes.
- AND THIS IS IMPORTANT!!!!
- After the cake has cooled, PUT IT IN THE FREEZER! If you remove it from the pan frozen it is less likely to fall apart!
- Allow to defrost before serving!
