We call it tsimmes but not sure if it really is 🙂  Whatever you want to call it, this carrot, raisin and honey dish can’t be beat.  Easy to double the recipe for more.

Quick and Easy Carrot Raisin and Honey “Tsimmes”

4 Servings

Ingredients

  • 1 bag baby carrots
  • 1 tablespoon oil
  • ½ cup of honey more or less
  • 1 or 2 cups of raisins

Instructions

  •  Spray shallow baking dish.
  •  Toss carrots, raisins and oil in baking dish.
  •  Drizzle honey all over.
  •  Bake covered at 350; toss occasionally. Cook until carrots are a little browned–maybe 45 minutes or a bit more.
  •  Serve hot or cold.

Special instructions: Carrots and raisins shrivel a bit when cooked. Easy to double the recipe for more.
