Red Onion Focaccia

Delicious and refreshing Focaccia bread with the wonderful flavors of rosemary, red onion, garlic and of course, potatoes

  • 1 ,100 Gram Mashed Potatoes
  • 2 1/2 cup Milk, warmed
  • 1 ,100 Gram All-purpose flour
  • 50 Gram Salt
  • 110 Gram Garlic Oil
  • 80 Gram Yeast
  • 1 large red onion, sliced
  • 1 1/3 cup Rosemary olive oil



1 2 Large Sheet Pans
2 Warm potatoes and milk together. Place in a large mixer with a dough hook. Add remaining ingredients and mix on low speed for 6 minutes
3 Cut dough into two pieces and oil top of dough. Let rise till dough is double in bulk. Roll out dough on a floured surface and place on greased sheet pans.
4 Continue rolling to make dough fit the pan. Pierce dough over entire surface then coat with rosemary olive oil and let rise till doubled in height.
