Red Potato Salad

Red Potato Salad

  • 8 large red skinned potatoes
  • 1 carrot, grated
  • 1 small onion, diced
  • 3/4 cup mayonnaise
  • Salt and pepper, to taste


Boil potatoes with the skin on until soft.
When slightly cooled, peel off the skin and cut into small chunks. Add carrots and onions to the potatoes. Dress with mayonnaise and season with salt and pepper.
