.We eat Mexican style food every week in my house and one of our favorite parts of the meal are these quick and easy refried beans. Any beans will work, pictured here are black beans. We use them in tacos, taquitos, or just for a dip with tortilla chips. Once you try these you won't be able to go back to whole beans.

- 1 tablespoon canola or olive oil
- 1 onion, finely diced (I like to use a chopper)
- 2 cloves garlic, minced
- 1 can beans (black or pinto are best)
- 1 handful cilantro, chopped (optional)
- salt to taste
Heat a medium sized frying pan over medium high heat. Add oil and onion, saute until starting to turn golden. Add garlic and then beans and stir for a few minutes until coated with oil. Mash beans with a fork or potato masher directly in the pan, until desired consistency. Then stir and add a little water, maybe 1/4 cup to keep it the mixture moist.
Remove from heat, sprinkle with cilantro and salt to taste.
