The crispy potato latke, with the smooth fresh taste of salmon makes for a great combination. Green goddess dressing, a mixture of herbs and sour cream, adds color and flavor to this impressive latke.

Salmon and Green Goddess Stuffed Latkes

Ingredients
- 1 6-ounce salmon fillet thinly sliced
- Stuffed Latke Base Recipe
- 1 6-ounce package of baby spinach
- 1 cup basil
- 1/2 cup fresh dill stems removed
- 1/2 cup fresh dill stems removed
- 1/2 cup fresh parsley stems removed
- 1 cup sour cream or yogurt use pareve sour cream or soy yogurt for meat meals
- 1/4 cup mayonnaise
- 1/4 cup lemon juice
- 3 cloves garlic
- 3 cloves garlic
- 1 tablespoon salt
- 1 teaspoon black pepper
Instructions
- Latkes:
- Start with your Stuffed Latke Base Recipe.
- In a large frying pan heat about 1/2 inch of oil on medium/high heat and place a heaping spoonful of latke mix into pan.
- Place a slice of salmon into latke mix.
- Top with another spoonful of latke mix.
- Flip over and fry for one minute.
- Serve hot with green goddess dressing.
- Dressing:
- Blend spinach, basil, dill, parsley, sour cream or yogurt, mayonnaise, lemon juice, garlic, salt and pepper.
- Place in container until ready to serve.

This was a different take on latkes for us and we loved them! I used Susie Fishbeins basic recipe and that followed the rest as posted. They were delicious! The green goddess dressing was not only a beautiful color it was tasty as well! We had leftover dressing that we put on our salad tonight!
