Sheet Pan Steak Fajitas

Make your fajitas in a sheet pan, so much easier than on the stove especially for large quantities. Sheet pan cooking also allows you to control the amount of oil used more easily and keep the fat down in this healthy weekday dinner.

Ingredients

  • 1 1/2 pounds steak thinly sliced
  • 2 bell peppers any color, sliced
  • 2 portobello mushrooms sliced
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Kosher salt
  • Pinch chili pepper or to taste
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons lime juice
  • 4 whole wheat tortillas

Instructions

  • Preheat oven to 425℉. Place steak, peppers, mushrooms and onions in a large bowl or ziplock bag.
  • Add garlic, paprika, cumin, salt, chili powder, EVOO and lime juice. Toss well and let sit for 5 minutes.
  • Pour mixture out onto sheet pan and roast for 10-15 minutes. Tossing halfway through. Serve on tortillas with salsa and guacamole or over rice.
