Slow Cooker Chicken Posole

Posole is basically a Mexican chicken soup, but made hearty with the addition of hominy. Hominy is sort of like corn, but larger, starchier and less sweet. It is easy to find in most grocery stores in the U.S., but you can use corn.

  • 1 tablespoon extra virgin olive oil
  • 1 ½ pounds chicken breast, with or without bone
  • 1 poblano pepper, diced or 1 roasted red pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 1 tablespoon ground cumin
  • 1 bay leaf
  • Pinch kosher salt
  • Freshly cracked black pepper
  • 4 cups chicken broth
  • 1 (29-ounce) can hominy, drained and rinsed
  • 1 cup green or red salsa

Posole optional toppings

  • Diced avocado
  • Lime wedges
  • Diced red, white, or yellow onion
  • Thinly sliced radishes
  • Shredded lettuce or cabbage
  • Diced tomatoes
  • Diced tomatillos
  • Diced green or red bell peppers
  • Chopped cilantro


Preheat slow cooker.

  1. Coat slow cooker with oil, top with chicken, pepper, onion, garlic, cumin, bay leaf, salt, pepper, and broth. Cook on low for 6 to 7 hours.
  2. Take chicken out of the pot and shred with two forks. Return to pot, add hominy and salsa and cook another 30 minutes.
  3. Prepare all the toppings and set aside in small bowls.
  4. Serve soup ladled in bowls and let everyone top their own.
