Slow Cooker Cilantro Lime Chicken Dinner
Prep ahead - you can put all ingredients a ziplock bag and freeze until ready to use.
Serve this chicken over brown rice, chopped lettuce or wrapped in a tortilla.
Note: We found that white meat chicken was best between the 3 and 5 hour mark, if you plan to cook it longer it is best to use dark meat.

Ingredients
- 1 red onion, minced
- 1 jalapeno, diced
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup frozen corn
- 1 lime, juiced
- ¼ cup chopped fresh cilantro
- 2 pounds skinless, boneless chicken thighs (you can use breasts if your slow cooker has a stay warm setting, breasts will get dry if cooked more than 2 or 3 hours)
- 1 tablespoon cumin
- 1 teaspoon salt
- 1 cup chicken broth
- For serving: 2 avocados, 2 cups chopped lettuce, 1 cup all-natural salsa and 6 cups brown rice or 6 whole wheat or corn tortillas
Preparation
Preheat slow cooker to low.
- Place the onion, jalapeno, black beans, lime juice, cilantro, and chicken in a slow cooker. Sprinkle with cumin and salt and top with broth, mix so that chicken is mostly covered.
- Cover and cook on low 3-6 hours. Shred chicken with two forks and put back in the slow cooker to soak up all the remaining broth, mix well and serve over yellow rice or in a tortilla garnished with avocado and more cilantro.
