Slow Cooker Lemon Lamb Stew

This stew really holds up well to long cooking times, it can sit at low until ready to serve for hours. We love that it is a one pot meal, with everything including the veg.

It is also extremely versatile, you can make it with chicken instead of lamb and even without any meat at all if you're vegetarian.

Ingredients

  • 1 large Spanish onion, sliced
  • 2 sweet potatoes or Russet potatoes, diced
  • 2 large carrots, cut into large chunks (optional)
  • 1 cup brown rice
  • 1 lb. meat, lamb stew meat or chicken legs
  • 10 ounces frozen spinach
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 3-4 cups water
  • 1 tablespoon curry powder
  • 1 tablespoon cumin
  • 1 tablespoon Paprika
  • 1 tablespoon salt (may need more if you like things salty)
  • Juice of 2 lemons

Preparation

1. Put all ingredients in crock pot. Turn on low and let cook for at least 8 hours.
