If you can find 100% buckwheat soba noodles they are gluten free and incredibly healthy, but they are a bit gummy. Be careful not to over cook and rinse well with cold water to loosen them before adding to the pot.
If you don’t like soba or can’t find them any noodle will work from soaked rice noodles to cooked whole wheat spaghetti.
This is the ultimate meal prep dish. Mix the sauce ahead, chop and prep the veggies, coat the chicken. Then when ready to cook it takes less than 10 minutes.

Soba Chicken Dinner

Ingredients
- ⅓ cup low sodium soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon silan
- 1 pound chicken breast cut into small strips
- 1 tablespoon cornstarch
- 2 tablespoons sesame oil
- 2 cups green vegetables of choices chopped spinach, broccoli, napa cabbage and/or green beans
- 1 inch fresh ginger grated
- 12 ounces dried soba noodles cooked per package instructions, rinsed and drained
- Optional: sriracha or chili oil
Instructions
- Combine the soy sauce, vinegar, and silan in a bowl, set aside.
- Combine chicken with cornstarch, coat well.
- Heat a large skillet or wok over medium high heat. Add the sesame oil and the chicken. Cook until brown all over.
- Add the spinach, broccoli, and/or green beans with ginger and garlic.
- Saute until mixed well. Slowly pour in the sauce, add noodles and cook until it coats the chicken and noodles.
- Serve garnished with green onions and sesame seeds.
