Soba Noodle Kugel
This is a great fusion of Jewish and Asian cuisine. The texture of the soba noodle works so well in this form. With the scallions and a dipping sauce it is a Jewish Scallion Pancake.

Ingredients
- 1/3 Cup Oil
- 1 small onion, finely chopped
- 4 scallions, finely chopped
- 12 oz. soba noodles
- 4 Eggs, beaten
- 1 tsp. salt
- 1 tsp. pepper

Preparation
1 Heat 2 tbsp. oil in a saute pan. Add onions and saute on medium heat until translucent.
2 Cook noodles per package directions, rinse, drain and toss with 1 tbsp. oil, allow to cool for 15 minutes.
3 Mix eggs with salt and pepper and add to noodles.
4 Preheat oven to 375. Pour the rest of the oil into a 9x9 inch baking dish or loaf pan. Heat pan with oil until hot.
5 Pour noodle mixture into pan and bake for 45 minutes or until golden.
6 Serve with a ponzu dipping sauce if dessired.
