Ingredients
- 2 boneless skinless chicken breasts, cut into 1-inch pieces, about 1 pound
- 1 cup lentils
- 1 cup black japonica rice
- 1 (14.5-ounce) can diced tomatoes
- 1 red onion, diced
- 3 cups chicken broth
- 1 bay leaf
- 2 Cloves garlic, minced
- 1 tablespoon fresh grated ginger, or 1/2 teaspoon ground ginger
- 1 tablespoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- 1/4 Teaspoon ground cloves
- 1/4 teaspoon black pepper
- kosher salt
