Ingredients

  • 1-2 tablespoons extra virgin olive oil
  • 1 8-ounce carton button mushrooms, sliced
  • 1 1-pound package frozen spinach, thawed and squeezed dry
  • 2 eggs lightly whisked
  • ½ cup mayonnaise
  • 1 teaspoon turmeric
  • 1 teaspoon sugar
  • ½ teaspoon celery seed
  • 2 tablespoons plus 2 teaspoons minced onion
  • 1 teaspoon onion powder
  • 1 ½ teaspoons dried parsley
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Preheat oven to 350°F.
  • In a large nonstick skillet, heat olive oil over medium-high heat.
  • Saute mushrooms until golden brown.
  • In a large bowl add mushrooms, spinach, eggs, mayonnaise, turmeric, sugar, celery seed, minced onion, onion powder, parsley, salt and pepper and mix until well combined.
  • Pour into a well greased muffin tins and bake at 350°F for 30 minutes.

    You can try in a square or circle about 8×8 or 9-inches and cook for around 45 minutes, but check to be sure that is enough.

    Hi Cindy, I have never used the canned spinach so not exactly sure how it will work, the biggest issue being how watery it is. But given the amounts, I would just make sure to strain it very well and then use the whole can to replace the amount in the recipe. It should work.

    How would I make a kugel out of this using a 27 oz can of chopped spinach (kosher , yes!). What kind of pan do I use and what adjustments do I make?

    Thaw and reheat in 300F oven for 20 minutes or so.

    Sure, they would freeze well. Best is to remove from tins and freeze on a tray then once frozen put them in a ziplock.

    I used it an they were quite good. I changed up the seasoning a bit. But I love the peppery taste of arugula. Thanks

    I wouldn’t, arugula is much more bitter and I don’t personally feel it would work as well.

    The ingredients list does not include sugar, but the directions lists “sugar” in Step 4. What is the correct version?
