Sizzling sauce, gooey cheese and layers of pasta epitomizes comfort food, the best part is you can make it ahead, it reheats well.

- 1 pound lasagna noodles
- 1 pound frozen spinach, thawed and drained
- 1 pound ricotta cheese
- 1 egg
- 1 (24-ounce) jar marinara sauce or crushed tomatoes
- 8 ounces shredded mozzarella cheese
- 1 cup shredded parmesan cheese
1 Preheat oven to 350℉.
2 Cook lasagna noodles per package directions.
3 Meanwhile in a small bowl mix spinach with eggs and ricotta.
4 Assemble lasagna by coating the bottom of the casserole with a light layer of marinara sauce then a layer of lasagna noodles. Top with ⅓ of spinach mixture, ⅓ of marinara sauce and sprinkle with ⅓ of mozzarella cheese. Repeat layering of noodles, spinach, sauce and cheese two more times. Top with final layer of noodles, sauce, mozzarella and sprinkle with Parmesan cheese.
5 Cover with foil and bake 40 minutes. Remove foil and bake 15 minutes more or until top is golden brown and bubbly. Let sit 10 minutes before slicing.
