Strawberry Yogurt Bark

yogurt bark

This is a healthier more refreshing riff off of chocolate bark. Don’t get it wrong, we love chocolate bark, it is loaded with antioxidants when made with high cacao dark chocolate and healthy fats if you use nuts, but this bark is pure fruit and yogurt and it’s refreshingly cold for the heat of summer.

  • Duration
  • Prep Time
  • 4Servings

  • 2 cups low fat plain Greek yogurt
  • 1 cup sweet fruit of choice, we like mango or banana
  • 5 strawberries, sliced
  • 1 small square 70% cacao dark chocolate, shaved

Line 2-8x8 cake pans or a 9x13 pan or container with parchment paper.

  1. In a blender, puree yogurt with fruit of choice until well blended.
  2. Spread yogurt onto prepared tray in an even ¼” layer. Top with sliced strawberries and shaves of chocolate.
  3. Freeze uncovered until frozen, about 2 hours. Break into pieces and serve immediately or store in a container in the freezer until ready to eat.
