My kids love this chicken, the gravy is great on top of rice. Make it in advance-the longer it sits in the gravy, the better it is. It freezes well too.

- 8 boneless, skinless, chicken breasts or thighs
- ¾ cup water
- ½ cup sugar
- 1 tablespoons extra virgin olive oil
- 1 teaspoon vinegar
- ⅔ cup ketchup
- ⅓ cup mustard
- Parsely or chives to garnish
1 Mix water, sugar, oil, vinegar, ketchup, and mustard.
2 Add chicken to marinade-make sure the chicken is at least covered halfway with marinade, if not double the recipe or use a smaller dish.
3 Bake at 350℉, covered for 1½ hours, flipping pieces over one time-instead of basting.
4 Garnish with parsley or chives and serve over rice or couscous
