I’ve been obsessed with this 2-ingredient dough for bagels and cinnamon buns for a while now, I shared it a while back on the FB group, but wasn’t sure the perfect way to use it as a meal until now. It is dairy so it has to be used for a vegetarian meal. I tried it on a creamy spinach pot pie, but it was not quite right. This was perfect. I don’t actually make it with 2 ingredients, instead of sel rising flour you will need to add baking powder and salt, so it’s 4-ingredients, but it takes minutes to make.

Mushroom Chard Galette

Ingredients
- 1 cup whole wheat flour 120 g – or spelt flour
- 2 teaspoons baking powder
- 3/4 teaspoon kosher salt
- 1 cup nonfat Greek yogurt 200 grams
- 1 cup low fat ricotta
- Salt and pepper
- 2 tablespoons extra virgin olive oil divided
- 4 ounces button or cremini mushrooms sliced
- 1 clove garlic chopped
- 1 bunch Swiss chard ribs and stems removed, leaves chopped
- 1 large egg beaten
Instructions
- Preheat oven to 400°F. In a large bowl combine flour, baking powder, salt and yogurt, mix well until a dough forms. You can use a mixer or simply knead for a few minutes with your hands. Turn onto a lightly floured surface and form into a ball.
- Heat 1 tablespoon EVOO in a large skillet and add mushrooms. Saute until golden and season with salt and pepper, remove to a plate to cool.
- Add another 1 tablespoon EVOO to the pan, add garlic and then Swiss chard, saute until just wilted. Season with salt and pepper. Let cool.
- Gently roll out the dough and place on a parchment paper-lined sheet pan.
- Spread most of the ricotta over the dough leaving a 1-inch border. Top with chard and mushrooms. Dollop with remaining ricotta. Bring edges of dough over the filling, overlapping as needed. Brush with egg and bake until golden, about 30-40 minutes.
