The Great Pumpkin Cake
Yes, my recipe card actually says The Great Pumpkin Cake. Ok, it really says Great Pumpkin Cake but I can have a little creative license, no?
- 1 bundt pan/2 loaf pans ServingsServings
Ingredients
- 2/3 cup shortening
- 2 2/3 cup sugar
- 4 eggs
- 1 pound pureed pumpkin
- 2/3 cup water
- 3 1/3 cup flour
- 2 teaspoon baking soda
- 1 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon ground cloves
- 2/3 cup chocolate chips
- 2/3 cup chopped nuts/raisins optional. ew.
Preparation
Cream the shortening and the sugar. Mix in the eggs. Add the all the rest of the ingredients besides the chocolate chips, nuts, and/or raisins and mix well. Gently fold in the chips, nuts and/or raisins (but you should really just use chocolate chips). Place in a greased and floured bundt pan (or two loaf pans) and bake at 350 for 65-75 minutes or until a toothpick comes out clean.
