Three Cheese Pita Panini

This is easy, easy, easy. Panini should be grilled over medium heat. If the temperature is too high the bread will toast and the cheese won’t melt. If you don’t have grill pans, just use sauté pans for grilling the panini.

  • 4 tablespoons hummus
  • 4 tablespoons Moroccan matbucha
  • 4 slices Havarti cheese
  • 4 slices Tnuva Swiss cheese
  • 8 slices red onion
  • 8 slices on-the-vine tomatoes
  • 8 whole basil leaves
  • 4 slices Tnuva Mozzarella cheese
  • 8 (7-inch) pitas without pockets
  • Cooking spray


1. Preheat oven to 250°F.

2. Lay out 4 pitas on a work surface. Spread 1 tablespoon hummus and 1 tablespoon matbucha on each pita. Top with 1 slice havarti, 1 slice Swiss, 2 slices onion, 2 slices tomato, and 2 basil leaves. Place 1 slice mozzarella on top. Cover with a second pita.

3. Spray 2 grill pans with cooking spray and place over medium heat. When pans are hot, place panini in the pans and weigh each down with a heavy pot lid or cast iron pan. Grill for 3 minutes on each side. Transfer to a baking sheet and place in the oven to keep warm. Repeat with remaining 2 panini.
