This is the muffin for the apple lovers in your house! Apples are used here in three ways: applesauce for moisture, fresh grated apples for texture and dried apples for chewiness. Feel free to add other healthy ingredients, such as walnuts to the batter or sunflower seeds to the tops.

- 1 3/4 cup flour
- 1/4 cup flaxseed meal or oat bran
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 1/2 cup canola oil
- 3/4 cup brown sugar
- 2 eggs
- 1 cup unsweetened applesauce
- 1 teaspoon pure vanilla extract
- 1 large granny smith apple, grated with the peel on
- 1 cup dried apples, finely diced
- 1/2 cup golden raisins, optional
- Raw sugar for sprinkling
Preheat oven to 375 degrees. Line two 12 cup cupcake pans with 18 cupcake liners. Set aside.
In a large bowl, sift together the flour, flaxseed meal or oat bran, baking powder and soda, salt and spices. Set aside.
In the bowl of an electric mixer, mix the oil, brown sugar and eggs on medium speed until the mixture is thickened, about two minutes. Add the applesauce and vanilla extract and blend thoroughly. All at once, add the dry ingredients and blend on low speed until just moistened. Add the grated apple, dried apple and raisins if using and fold in on low speed.
Fill each cupcake liner with ¼ cup of batter (a standard size ice cream scoop is very helpful here). Sprinkle the top of each muffin with raw sugar. Bake for 15 to 20 minutes, or until the muffins are golden brown and a tester inserted in the center of a muffin comes out clean.
Allow muffins to cool in the pan for 10 minutes, then remove and cool completely on a rack.
