Tuna Tartar with Honey Sesame Wonton Crisps

  • Cooking spray
  • 16 Gefen Square Wontons, thawed
  • 3 tablespoon honey
  • 2 tablespoon toasted sesame seeds
  • 1 (10-ounce) sushi-quality ahi tuna steak, cut into ¼-inch dice
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon chopped cilantro
  • 1 teaspoon red chili flakes
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon black sesame seeds
  • 1 teaspoon olive oil
  • ½ teaspoon kosher salt


  1. Preheat oven to 350° F. Lightly spray a rimmed baking sheet.
  2. Lay wontons out on the prepared baking sheet. Brush with honey, spray with cooking spray, and sprinkle with toasted sesame seeds. Bake 6 to 8 minutes, or until golden brown.
  3. In a medium bowl, combine tuna, vinegar, cilantro, chili flakes, sesame oil, sesame seeds, olive oil, and salt. Gently stir to evenly coat.

To plate: Place a ring mold or round cookie cutter in the center of each appetizer plate. Pack the tuna mixture into the mold tightly. Remove the mold by slowly pulling it straight up. Serve with wonton crisps.
