Veggie Skewers with Green Goddess Dip
Everything is better when it's on a stick. Pack 'em up with our fabulous dressing, sliced fruit, thawed edamame, pita triangles, hard-boiled egg, juice box or milk like this bento box lunch.
Ingredients
Vegetables
- Cucumbers
- Zucchini
- Grape tomatoes
- Peppers
- Sugar snap peas, cut into 1½-inch pieces
- Extra virgin olive oil
- Kosher salt
- Freshly ground black pepper
Green Goddess Dipping Sauce
- ½ cup mayonnaise
- 1 ripe avocado, pitted and lightly mashed
- 2 teaspoons fresh lime juice
- 2 scallions
- Several sprigs of fresh parsley
- Kosher salt
- Freshly ground black pepper
Preparation
Vegetables:
1. Toss vegetables in evoo and season with salt and pepper.
2. Thread vegetables onto skewers.
Green Goddess Dipping Sauce:
1. Pulse mayonnaise, avocado, lime juice, scallions, and parsley in a food processor. Season with salt and pepper.
