- 5 Russet Potatoes, peeled
- 1 yellow onion
- 2 scallions
- 2 Eggs
- 1/2 teaspoon salt
- 1/2 teaspoon wasabi powder
- Oil for frying
1 Grate potatoes in a food processor and then cut to make them a smaller grate. Place potatoes in a clean kitchen towel and squeeze out all juices into a bowl.
2 Allow the liquid to settle and then pour off the water and add the potato starch to the potatoes in a large bowl. Finely chop onions and add to bowl with eggs, salt and wasabi.
3 Heat large pan over high heat and once hot add potato mixture to pan in spoonfulls. Flatten wtih spatula.
4 After 3 minutes turn over if golden brown and cook other side. Remove to drain on paper towels.
5 Serve with wasabi mayonaisse.
