Servings

8 Servings

Ingredients

  • 4 cups whole spelt flour
  • 1 tablespoon yeast
  • 1 teaspoon kosher salt
  • ½ cup sesame seeds divided
  • 2 cups water

Instructions

  • Preheat oven to 400 F. Line a sheet pan with parchment paper.
  • Combine flour with yeast, salt, ¼ cup seeds and water, adding ½ cup at a time.
  • Mix well until dough forms. Cover and let rise for 1-2 hours. At this point you can cover and keep in fridge until ready to use (it gets even better if you let it sit a day, but is not required)
  • Shape into 8 buns using extra flour if needed and place on sheet pan. Let rise 30 minutes.
