- 4 cups whole spelt flour
- 1 tablespoon yeast
- 1 teaspoon kosher salt
- ½ cup sesame seeds, divided
- 2 cups water
Preheat oven to 400 F. Line a sheet pan with parchment paper.
- Combine flour with yeast, salt, ¼ cup seeds and water, adding ½ cup at a time.
- Mix well until dough forms. Cover and let rise for 1-2 hours. At this point you can cover and keep in fridge until ready to use (it gets even better if you let it sit a day, but is not required)
- Shape into 8 buns using extra flour if needed and place on sheet pan. Let rise 30 minutes.
- Bake for 10 minutes
