Zaatar Roast Potatoes with Scallion Sauce

You can simply roast your potatoes with olive oil and zaatar and get nice results, but this is the best method for making make-ahead potatoes, they take more time, but they taste amazing even cold, you can also make a big batch of baked potatoes and eat some fresh as loaded baked potatoes and the rest can be turned into these crispy yummies.

Ingredients

Zaatar Roast Potatoes

  • 8 medium potatoes
  • Extra virgin olive oil, such as Colavita
  • Kosher salt
  • Freshly cracked black pepper
  • 1-2 tablespoons zaatar

Scallion Garlic Sauce

  • ¼ cup mayonnaise
  • ½ cup sliced scallions
  • 3 cloves garlic, mince
  • 1 tablespoon lemon zest
  • Kosher salt and freshly ground black pepper

Preparation

Zaatar Roast Potatoes

1. Preheat oven to 400° F.

2. In a bowl toss potatoes with evoo, salt, and pepper until completely coated. Place on a large baking sheet and bake until fork tender, about 60 minutes.

3. Remove from oven and allow cool at room temperature for an hour or so, then place in fridge overnight to cool completely.

4. The next day, cut the potatoes into wedges, toss with more evoo and zaatar and bake at 375°F for at least 45 minutes, until golden and crispy. Serve with scallion sauce.

Scallion Garlic Sauce

1. Stir together mayonnaise, scallions, lemon zest, and garlic in a bowl. Season with salt and pepper. 

2. Chill 2 hours or up to 3 days. Serve with roast potatoes.
